I've designed a few websites using dreamweaver and have become an avid fan of the Proj 7 extensions and use a number of them including harmony. I want to progress my website design to add relatively simple e commerce functionality and booking system functionality. Does anyone have any examples or ideas that work best with DW and Proj 7?

Me too!
I cannot even find a link on Adobe's website for Dreamweaver without having to google it! Do you see it listed in their menu? I certainly do not. Makes me VERY nervous because it is a subscription service and if Adobe cancels DW then that is it. Just WordPress, Wix, etc... will be left. I do not like CoffeeCups web designer. Limited and ugly websites like most Wix and WP websites are.
For now, check out JotForm: https://www.jotform.com/apps/industry/e-commerce
I did manage to set up a PayPal test page and it looks like it would work, but I do not know how to edit the template yet.

I use this:
https://www.ecommercetemplates.com/They provide Dreamweaver templates. You still have to set up your payment processors separately.

I have used ECWID on a couple PVII sites for small shopping carts. You configure the shopping cart in ECWID and then just add a line of code it generates inside DW. Here are a couple examples inside PVII sites that have been operating without a glitch for several years now:
